Piled in a messy stack of booklets, I thought it was just another manufacturer&#8217;s cookbook from the sixties or seventies. The cover is missing. The recipes themselves seem &#8220;modern&#8221;, not dated. I find my mother&#8217;s notes on a few of the cake recipes, so this was her cookbook. Finally I think to ask myself: &#8220;when was this published?&#8221; OMG, it&#8217;s from 1932! It should have been shelved with the vintage cookbooks.<\/p>\n<p>I have found another treasure, albeit a little one.<\/p>\n<p>Here is a photo of the cover (found\u00a0on the internet):<\/p>\n<p><a href=\"http:\/\/cooking.pfeist.net\/wp-content\/uploads\/2015\/07\/bakers1932CB.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-3834\" src=\"http:\/\/cooking.pfeist.net\/wp-content\/uploads\/2015\/07\/bakers1932CB.jpg\" alt=\"cover of bakers 1932 CB\" width=\"236\" height=\"332\" srcset=\"http:\/\/cooking.pfeist.net\/wp-content\/uploads\/2015\/07\/bakers1932CB.jpg 236w, http:\/\/cooking.pfeist.net\/wp-content\/uploads\/2015\/07\/bakers1932CB-213x300.jpg 213w\" sizes=\"auto, (max-width: 236px) 100vw, 236px\" \/><\/a>I <a href=\"http:\/\/cooking.pfeist.net\/?p=1650\">wrote about the South American origins<\/a> of chocolate in my entry on the <em>Mexican Cookbook<\/em>. &#8220;The Spaniard ships that returned to Europe were laden with seeds and cuttings, which flourished in various climates.&#8221; By 1932, chocolate had been a part of American cuisine for four hundred years. Here&#8217;s a quote from the introduction of <em>Baker&#8217;s Best Chocolate Recipes<\/em>:<\/p>\n<p style=\"padding-left: 30px;\">&#8220;Four hundred years of popularity. Few flavors have ever had the widespread popularity of chocolate. Rich . . . smooth . . . fragrant . . .\u00a0 its delightful flavor has appealed to everyone wherever and however it has been served.&#8221;<\/p>\n<p>And about chocolate milk:<\/p>\n<p style=\"padding-left: 30px;\">&#8220;Foamy, creamy-rich cocoa is a wonderful food with which to woo finicky child-appetites \u2013 an easy and delicious way of helping to include the daily quart of milk in their meals. Grown-ups welcome cocoa, too, as a way of building up run-down systems. And in this day of slimmer waists, cocoa is popular because it provides nourishment that is satisfying but not fattening.&#8221;<\/p>\n<p>According to this book, the first chocolate mill in the US was built on the banks of the Neponset river in Dorchester, Massachusetts. In 1780 it became the establishment of Walter Baker and Company. We can still buy <a href=\"https:\/\/en.wikipedia.org\/wiki\/Baker%27s_Chocolate_%28brand%29\">Baker&#8217;s chocolate<\/a> today, although it is currently owned by Kraft Foods.<\/p>\n<p>This excerpt from the book gives the story behind the drawing of the woman in the apron offering a meal to a guest:<\/p>\n<p><a href=\"http:\/\/cooking.pfeist.net\/wp-content\/uploads\/2015\/07\/chocstory1.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-3838\" src=\"http:\/\/cooking.pfeist.net\/wp-content\/uploads\/2015\/07\/chocstory1.jpg\" alt=\"chocolate story\" width=\"450\" height=\"129\" srcset=\"http:\/\/cooking.pfeist.net\/wp-content\/uploads\/2015\/07\/chocstory1.jpg 450w, http:\/\/cooking.pfeist.net\/wp-content\/uploads\/2015\/07\/chocstory1-300x86.jpg 300w\" sizes=\"auto, (max-width: 450px) 100vw, 450px\" \/><\/a><a href=\"http:\/\/cooking.pfeist.net\/wp-content\/uploads\/2015\/07\/chocstory2.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-3839\" src=\"http:\/\/cooking.pfeist.net\/wp-content\/uploads\/2015\/07\/chocstory2.jpg\" alt=\"chocolate story\" width=\"450\" height=\"568\" srcset=\"http:\/\/cooking.pfeist.net\/wp-content\/uploads\/2015\/07\/chocstory2.jpg 450w, http:\/\/cooking.pfeist.net\/wp-content\/uploads\/2015\/07\/chocstory2-238x300.jpg 238w\" sizes=\"auto, (max-width: 450px) 100vw, 450px\" \/><\/a>I will definitely keep this cookbook. Not only because it is old, but because it has good basic chocolate recipes, like for a cocoa syrup if I run out of the bottled kind, and cakes and chiffon pie and eclairs and on and on. I decide to make the brownies for this blog. Sure, I have dozens of recipes for brownies, but this one is from 1932! I even used Baker&#8217;s chocolate:<\/p>\n<p><a href=\"http:\/\/cooking.pfeist.net\/wp-content\/uploads\/2015\/07\/bakersbar.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-3843\" src=\"http:\/\/cooking.pfeist.net\/wp-content\/uploads\/2015\/07\/bakersbar.jpg\" alt=\"Baker's baking chocolate\" width=\"450\" height=\"238\" srcset=\"http:\/\/cooking.pfeist.net\/wp-content\/uploads\/2015\/07\/bakersbar.jpg 450w, http:\/\/cooking.pfeist.net\/wp-content\/uploads\/2015\/07\/bakersbar-300x159.jpg 300w\" sizes=\"auto, (max-width: 450px) 100vw, 450px\" \/><\/a><strong>Brownies, 1932 Baker&#8217;s version<\/strong><a name=\"recipe\"><\/a><\/p>\n<ul>\n<li>3\/4 cup flour<\/li>\n<li>1\/2 teaspoon baking powder<\/li>\n<li>1\/3 cup butter<\/li>\n<li>2 ounces Baker&#8217;s Unsweetened Chocolate<\/li>\n<li>1 cup sugar<\/li>\n<li>2 eggs<\/li>\n<li>1 teaspoon vanilla<\/li>\n<li>1\/2 cup chopped walnuts<\/li>\n<\/ul>\n<p>Stir together the flour and baking powder.<\/p>\n<p>Melt the butter and chocolate in a saucepan and let cool a bit.<\/p>\n<p>Beat the eggs, then add the sugar and beat it in.
