These muffins are oh so good! They pack a full cup of coconut and a cup and a half of apples into 12 muffins. I added some cinnamon and used fresh nutmeg.<\/p>\n<p>I think these are really &#8220;cupcakes&#8221;. Too rich to be called &#8220;muffins&#8221;. Maybe a little whole wheat flour will assuage my conscience.<\/p>\n<p>Here is the original recipe:<\/p>\n<p><a href=\"http:\/\/cooking.pfeist.net\/wp-content\/uploads\/2015\/07\/WWAppleCoconutMuffinsRec.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-3964\" src=\"http:\/\/cooking.pfeist.net\/wp-content\/uploads\/2015\/07\/WWAppleCoconutMuffinsRec.jpg\" alt=\"Apple Coconut Muffins recipe\" width=\"450\" height=\"340\" srcset=\"http:\/\/cooking.pfeist.net\/wp-content\/uploads\/2015\/07\/WWAppleCoconutMuffinsRec.jpg 450w, http:\/\/cooking.pfeist.net\/wp-content\/uploads\/2015\/07\/WWAppleCoconutMuffinsRec-300x227.jpg 300w, http:\/\/cooking.pfeist.net\/wp-content\/uploads\/2015\/07\/WWAppleCoconutMuffinsRec-397x300.jpg 397w\" sizes=\"auto, (max-width: 450px) 100vw, 450px\" \/><\/a>Below is my version:<\/p>\n<p><strong>Apple Coconut Muffins<\/strong><br \/>\n<em>makes 12 muffins<\/em><\/p>\n<ul>\n<li>1\/2 cup unsalted butter (or use regular butter and skip the additional salt)<\/li>\n<li>1 cup sugar<\/li>\n<li>1 teaspoon vanilla<\/li>\n<li>2 eggs<\/li>\n<li>1\/2 cup milk<\/li>\n<li>1 cup whole wheat pastry flour<\/li>\n<li>1 1\/2 cups all-purpose flour<\/li>\n<li>2 1\/2 teaspoons baking powder<\/li>\n<li>1\/2 teaspoon salt<\/li>\n<li>1\/2 teaspoon ground nutmeg (freshly ground if possible)<\/li>\n<li>1 teaspoon cinnamon<\/li>\n<li>1 cup shredded sweetened coconut (this weighed 3 1\/2 ounces on my scale)<\/li>\n<li>1 1\/2 cups chopped, peeled apple (for me, this took 1 1\/2 large apples)<\/li>\n<\/ul>\n<p>Prepare 12 muffin tins in your favorite fashion.<\/p>\n<p>In a mixer, cream the butter, sugar, and vanilla.<\/p>\n<p>Stir together the flours, baking powder, salt, and spices.<\/p>\n<p>Whisk together the eggs and milk.<\/p>\n<p>Add the flour mixture alternately with the egg mixture to the creamed mixture, blending after each addition only until just combined. Stir in the coconut and apples.<\/p>\n<p>Bake at 350\u02da for 30 minutes or until they are light brown on top and test done with a toothpick. Cool in pan at least 15 minutes before removing to cool on a wire rack.<\/p>\n<p><a href=\"http:\/\/cooking.pfeist.net\/wp-content\/uploads\/2015\/07\/applecoconutmuffin.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-3965\" src=\"http:\/\/cooking.pfeist.net\/wp-content\/uploads\/2015\/07\/applecoconutmuffin.jpg\" alt=\"Apple Coconut Muffins\" width=\"450\" height=\"384\" srcset=\"http:\/\/cooking.pfeist.net\/wp-content\/uploads\/2015\/07\/applecoconutmuffin.jpg 450w, http:\/\/cooking.pfeist.net\/wp-content\/uploads\/2015\/07\/applecoconutmuffin-300x256.jpg 300w, http:\/\/cooking.pfeist.net\/wp-content\/uploads\/2015\/07\/applecoconutmuffin-352x300.jpg 352w\" sizes=\"auto, (max-width: 450px) 100vw, 450px\" \/><\/a>Be sure to let these cool before removing from the pan. I tried getting one out after only 5 minutes and \u2013 oops! It fell apart. So of course I had to taste it. And then go back for more.
