My mother always made these at Christmas when I was young. (And now I do!)<\/p>\n<p>2012: I haven&#8217;t made these in many years, but these are great and unique cookies and belong in this collection. I think of these as one of my mother&#8217;s &#8220;signature&#8221; cookies. Although I associate them with Christmas, they could be eaten any time of year!<\/p>\n<h2>Double Crunchers<\/h2>\n<ul>\n<li>1\/2 cup Crisco<\/li>\n<li>1\/2\u00a0cup white sugar<\/li>\n<li>1\/2\u00a0cup brown sugar<\/li>\n<li>1 egg<\/li>\n<li>1\/2 teaspoon vanilla<\/li>\n<li>1 cup flour<\/li>\n<li>1\/2\u00a0teaspoon baking soda<\/li>\n<li>1\/4\u00a0teaspoon salt<\/li>\n<li>1\u00a0cup corn flakes<\/li>\n<li>1\u00a0cup oatmeal (quick cooking)<\/li>\n<li>1\/2\u00a0cup coconut<\/li>\n<\/ul>\n<p>Combine Crisco, sugars, egg, and vanilla. Stir in flour mixture, add corn flakes, oatmeal, and coconut.<\/p>\n<p>Form teaspoons of dough, flatten with bottom of glass dipped in flour. Bake at 350\u00b0 for 8-10 minutes. Form (an equal number of) balls of 1\/2 teaspoon dough. Bake for 8 minutes.<\/p>\n<p>Chocolate filling: Melt 1 6 oz. pkg chocolate chips with 1\/2 cup powdered sugar and 1 tablespoon water. Blend in 3 oz. cream cheese. Beat until smooth.
